White Cheddar Chicken Pasta Bake

Sometimes I really hate the fact that I love cheesy pasta dishes so much. It would be so much easier to maintain my diet if I hated them! But every once in a while I just need to splurge. And that is exactly what I did tonight! There is something so comforting about noodles with tons of melty cheese and tender chicken. Talk about total comfort food. It was a hit!

White Cheddar Chicken Pasta Bake
Serves 6

16 oz. pasta of your choice (I used elbows)
2 cups cooked chicken, chopped
1 tsp. garlic powder
2 tbsp. butter
1.5 cups low fat milk
2 tbsp all-purpose flour
2 cups shredded white cheddar cheese
1/4 tsp salt
1/2 cup Panko bread crumbs

Pre-Heat Oven to 375.

Bring a large pot of water to boil, then add pasta and cook for about 5 minutes. Drain and set aside.
In a large saucepan, melt the butter and whisk in the garlic powder, salt and flour. Cook for one minute. Add the milk and once it starts to boil, slowly add in your shredded cheese. Stirring until the cheese is melted and the sauce thickens. Stir in chicken and pour mixture over pasta and then transfer to a 13x9 baking dish. Sprinkle top with Panko breadcrumbs.

Bake for 20-25 minutes or until heated through. Garnish with sliced green onions. Enjoy!
