Slow Cooker Broccoli Cheddar Chicken Soup

Today is the perfect day for a steaming hot bowl of soup. It's blustery and chilly outside. I'm certainly not ready for this type of weather yet! I love Broccoli Cheddar Soup but wanted to add a little protein to it and the chicken went perfectly with it. It was delish!

Slow Cooker Broccoli Cheddar Chicken Soup
Serves 8
Cal 178, Carbs 24.3, Fat 5, Fiber 2, Protein 9.7

5 cups low sodium chicken broth
8 oz. chicken tenderloins
1/2 cup diced yellow onion
2 cups chopped broccoli
6 cups diced hash brown potatoes
1 tsp. garlic powder
1 tsp. salt
1 cup milk (I used 2 percent)
1.25 cups reduced fat cheddar/jack cheese

Arrange chicken in bottom of slow cooker. Season with salt and garlic powder. Add the chicken broth, potatoes, onions, and broccoli. Cover and cook on low for 6 hours.

Break chicken into pieces and return to slow cooker. Add in the milk and cheese. Cover and continue cooking for 30 minutes. Ladle into bowls and enjoy!
