I'm all about the skillets lately! Its great for busy weeknights when I don't feel like spending all my time cooking. I can't even remember the last time I had Jambalaya, but both my husband and I love it. Toss in your favorite meat and veggies and you've got a hearty and delicious meal!
Skillet Jambalaya
Serves 6

Cal 239, Carbs 32.8, Fat 6.5, Fiber 1, Protein 11.8
Ingredients
1 tbsp. olive oil
1 clove garlic, minced
14 oz. cajun chicken smoked sausage, cut into slices
1 can petite diced tomatoes, undrained
1 cup chicken broth
1 medium green pepper, diced
1 medium onion, diced
1-1/2 cups uncooked instant rice
1 tbsp. Cajun seasoning

This is so simple and sounds very flavorful. I love 1pot meals.
