Slow Cooker Loaded BBQ Chicken and Potato Soup

You might be thinking that I am crazy for making soup in the middle of August but eh...who cares! I love a good pot of soup especially if it's made in the slow cooker. Such a time saver! The idea behind this soup comes from my Loaded BBQ Chicken and Potato Casserole. It's basically the same thing but in a soup. It was beyond good and a hit with the entire family!

Slow Cooker Loaded BBQ Chicken and Potato Soup
Makes Approx 8 Cups
WW PP=5 (Per Cup)
Cal 181, Carbs 19.8, Fat 4.2, Fiber 1, Protein 15.6

12 oz. boneless skinless chicken tenderloins
5 cups frozen diced potatoes
6 cups fat free chicken broth
1/2 cup reduced fat milk (I used 2 percent)
1/2 yellow onion diced
1/2 cup bbq sauce
1/3 cup crumbled bacon or bacon bits
1 tsp. garlic powder
1/2 tsp. salt
1 cup reduced fat shredded cheddar jack

Add chicken, bbq sauce, onion, chicken broth, garlic powder, and salt to the slow cooker. Cover and cook on low for 5-6 hours. Break chicken into pieces and stir in milk, bacon, and shredded cheese. Continue cooking for another 30 minutes.

Ladle soup into bowls and top with additional bacon, green onions, and sour cream, if desired. Enjoy!
