Southwest Ranch Chicken Club Sandwiches

I can't wait until it gets really warm outside and I won't have to hover over the grill shivering. Bring on Summer! I'm over this cold Spring and can't wait for sun, warmth, and bbq's. In the meantime I'm going to just pretend that it's warm enough to actually grill. These chicken sandwiches were so good. Perfect BBQ food!

Southwest Ranch Chicken Club Sandwiches
Makes 2 Sandwiches
WW PP=10
Cal 380, Carbs 30.5, Fat 14, Fiber 2, Protein 33.5

2 boneless skinless chicken breasts
2 tbsp. Southwest Chipotle Seasoning Blend
4 slices bacon cooked crisp
4 slices tomato
2 slices cheese of your choice (I used Sargento Reduced Fat Pepper Jack and Cheddar)
2 tbsp ranch spread (I love Hidden Valley)
Bakery Rolls or French Bread

Sprinkle seasoning over chicken. Grill chicken 7-8 minutes per side or until juices run clear.

To assemble sandwiches: spread 1 tbsp. ranch over each roll top with chicken and then cheese, bacon, and tomato. Enjoy!

  1. Sounds like a delicious grilled chicken club sandwich. It is cold! I have had the heat on and the rain is pouring and the wind is letting itself known too!!
I guess spring will come a little late this year!
    Blessings dear. Catherine xo
