Buffalo Chicken Tater Tot Casserole

I've heard of Tater Tot Casserole (mainly because of the Duggars) before and I've never had the desire to make it since I'm not a huge fan of cream of "whatever" soups mixed with ground beef. No, thanks. Don't get me wrong, I'm sure it's good but not my style. Now, if you make a tater tot casserole loaded with cheese, potatoes, and buffalo chicken? Yes, Please! That is right up my ally! This casserole turned out fabulous! If you are like me and don't like the traditional version, then you have got to give this one a try. Trust me, you won't be disappointed!

Buffalo Chicken Tater Tot Casserole
Serves 8
Cal 234, Carbs 16.2, Fat 11.1, Fiber 2, Protein 17.1

4 cups cooked chicken, diced
2 tsp. dry ranch seasoning
1/3 cup crumbled bacon bits
3/4 cup hot sauce, divided (you can adjust this according to your spice level)
1 tsp garlic powder
1/4 cup crumbled blue cheese
3/4 package Tater Tots
1 cup grated four cheese blend
sliced green onions, for topping

Pre-Heat oven to 375

Mix 1/2 cup of buffalo sauce, dry ranch seasoning, and chicken and spread it in the bottom of a 13×9 casserole dish. Sprinkle the crumbled blue cheese and bacon on top of the buffalo chicken mixture.

Arrange the tater tots lengthwise and in rows evenly over the buffalo chicken and blue cheese. Sprinkle with shredded cheese and drizzle the remaining sauce over the tater tots.

Bake for 40-45 minutes or until potatoes are cooked through and crispy. Top with sliced green onions. Enjoy!
