I love love love Starbucks Lemon Loaf. It's a definite splurge for me since it isn't exactly diet friendly but it's so tasty! Today is a great day for baking and staying inside. We are expecting another snowstorm and I decided to bake something yummy. I wanted to try and create a skinny version of the popular dessert. The end result was amazing! Super moist and it tasted exactly like the Starbucks version. I'll definitely be making this one again and soon!
Skinny Copycat Starbucks Lemon Loaf
Makes Approx 18 one inch slices from 2 9x5 Loaf Pans
WW PP=6
Cal 210, Carbs 27, Fat 9.8, Fiber.5, Protein 3.0
Ingredients
1 box yellow cake mix
4 eggs
1 box lemon pudding mix
1/2 cup fat free milk
1/2 cup fat free milk
1/2 cup vegetable oil
1 cup reduced fat sour cream
1/3 cup lemon juice
4 tbsp whipped fluffy white frosting (I used Betty Crocker)
Preheat oven to 350 degrees

While oven is pre-heating spray two 9x5 loaf pans with non stick cooking spray.
In a large bowl combine all ingredients except for frosting. Using a hand mixer beat until well combined. About one minute.

Divide batter between the loaf pans. Bake for 45 minutes or until golden brown and cooked through.
Let cool for 10 minutes before removing loaves from pans.
To prepare glaze place the frosting in a microwave safe bowl and cook for 35 seconds or until frosting is slightly thinned out. Drizzle over loaves and slice. Enjoy!
