Mexican Sloppy Joes

Did you know that today is National Sloppy Joe Day? I didn't even realize that they had a day dedicated to Sloppy Joes! Although up until a few years ago I never even ate them. It wasn't that I didn't like them I just found them to be "Eh" take it or leave it, that is until I started experimenting with different sloppy joe recipes and now I really enjoy them. So, in honor of Sloppy Joe Day, I decided to make Mexican Sloppy Joes. It was a fun twist on the traditional sloppy joe and very tasty! Go ahead and give it a try. Serves 4
WW PP=10 (One Sandwich with Whole Wheat Hamburger Bun)
Cal 406, Carbs 36, Fat 13, Fiber 3, Protein 34.5

1 lb lean ground beef
1 taco seasoning packet (I used low sodium)
1/2 cup water
1 8oz. can tomato sauce
1 can enchilada sauce
1 can Rotel, drained
1/2 cup low sodium fat free black beans, rinsed and drained
4 slices reduced fat cheddar cheese
4 hamburger buns or rolls (I used whole wheat buns)

Cook meat in large skillet over medium-high heat 5-10 minutes or until no longer pink, stirring frequently; drain.

Stir in remaining ingredients except for cheese. Simmer 15-20 minutes, stirring occasionally. Spoon meat mixture into rolls and top with cheese. Enjoy!
