Crispy Baked Lemon Chicken

Happy New Year! I can't believe another year has come and gone and we are now into 2014! Ever since becoming a Mom I feel like the years go by much faster. I hope everyone had a great New Years Eve. Ours was very low key. Quite the change from years past. But I enjoyed it. For tonight's dinner I wanted something easy and healthy. I need to detox from all those appetizers I ate last night. This Crispy Baked Lemon Chicken is so easy and delicious. It was a hit with the whole family!

Crispy Baked Lemon Chicken
Serves 4
Cal 297, Carbs 15, Fat 9, Protein 37

4 boneless skinless chicken breasts
1/3 cup fresh lemon juice
2 tbsp. lemon pepper seasoning (I like Mrs. Dash)
1 package shake n bake extra crispy
1 cup italian five cheese blend

 Preheat oven to 375 degrees F. Line a large cookie sheet with foil. Spray the foil with cooking spray. Set aside.

In a small bowl combine shake n bake along with the lemon pepper seasoning.

Dip chicken into lemon juice and then take chicken and drop into a bag filled with the shake n bake and lemon pepper mixture. Toss until fully coated.

Sprinkle the coated chicken with cheese. Bake for 25- 30 minutes. Serve over pasta or rice. Enjoy!
