Crock Pot Cheesy Potato and Sausage Soup

I love making soup in the Crock Pot and today is the perfect day for a nice bowl of it. It's foggy and rainy. My original plan was to make a batch of tomato soup but I was short a few ingredients and was in no mood to hop in the car and drive to the store when it's so crappy outside. I settled on the Cheesy Potato and Sausage soup instead. It was a hearty and delicious meal!

Crock Pot Cheesy Potato and Sausage Soup
Serves 8
Cal 183, Carbs 19.5, Fat 5.8, Fiber 1.5, Protein 13.3

1-16oz package smoked turkey sausage, cut into chunks
1 package cubed refrigerated potatoes (I used simply potatoes)
1/2 yellow onion, diced
1 tsp. garlic powder
1 tsp. salt
1/2 tsp. red pepper
1 cup fat free milk
4 cups fat free chicken broth
1 cup shredded American cheese blend (I like Kraft)

Add potatoes, onions, and chicken broth to the crock pot. Season with salt, garlic powder, and red pepper. Stir. Cover and cook on low for 5 hours. Add the sausage, cheese, and milk. Stir and continue cooking an additional hour. Garnish with additional cheese and sour cream if desired. Enjoy!
