Creamy Bacon Cheddar Chicken Pasta

I love a good pasta dish and if it contains bacon then I REALLY love it! This is one of my favorite simple pasta dishes. I used to make it all the time when I was single. I did create a lighter version (now that I'm older and don't have a super fast metabolism like I did in my twenties!) and it was just as good if not better than my original version. Yum!

Creamy Bacon Cheddar Chicken Pasta
Serves 6
Cal 274, Carbs 30.3, Fat 6.8g, Fiber 2g, Protein 22.3

8 oz. mini bowtie pasta
1 cup non fat greek yogurt
1/3 cup milk (I used non fat)
1 tbsp. reduced fat sour cream
1 tsp. salt
1 tsp. pepper
1 tsp. garlic powder
1 cup reduced fat shredded cheddar cheese
1/2 cup crumbled bacon or bacon bits
1 1/2 cups cooked chicken, chopped

Start by cooking pasta according to package directions.

While pasta is cooking, in a large saucepan, whisk together the milk and yogurt. Season with salt, pepper, and garlic powder and slowly whisk in your shredded cheese until melted and smooth. Add cooked pasta, bacon, and chicken to cheese mixture. Right before serving stir in tablespoon of sour cream.  Serve and enjoy!

  3. Oh my gosh, this looks amazing. My husband and our friends are going to go nuts for this, anything with bacon usually goes over well! I've been looking for something to make for our get together this week and I've found a winner. Thank you so much for sharing! Also, not sure if you’re a reader or not, but there’s a great book out called “Mofongo” by Cecilia Samartin, I’ve been recommending it to anyone I come across who likes cooking and company. I just finished it and it’s such a great summer read; It’s all about food and family, two things summer usually revolves around.   10. I thought the dish left a terrible aftertaste and had way too much pepper. Very disappointed.

  11. My sauce was very watery and the cheese ended up chunky. I tried making the sauce twice but it didn't turn out. Not sure what happened.

    1. Sorry to hear that your sauce didn't turn out. Not sure what would cause it to turn out chunky.

  13. I tried making the recipe this evening and I had the same problem as another poster. It seemed that my milk and yogurt separated and the cheese and yogurt got a grainy/chunky texture. The sauce was runny and chunky at the same time. I made it two times and both times the same thing happened. I even tried to add a little butter the second time in hopes the fat from the butter would help bind together the yogurt and milk. It just didn't look appetizing. I ended up making a simple white sauce and tossing it with the pasta instead. Bummer!

  14. I'm sorry to hear that you had a problem with the sauce. I know that if the yogurt or milk were to get too hot it could cause it to curdle. Not sure what else it could be!

  15. I had the same issue with the yogurt/milk separating or curdling, so I just used additional milk (a total of 1 cup), flour, and then stirred in the cheese. I also used a little less garlic powder and pepper, elbows instead of bowties. My fiance LOVED the final result.
