Tex Mex Casserole

I was intrigued by this recipe because there are Doritos in it. Who knows, maybe it isn't all that unusual but I've never made a casserole with Doritos before, but then again there is always a first time for everything! This was crazy good and while not the healthiest of casseroles, serving it with a nice garden salad  helped take some of my guilt away. After having this I will never give the side eye to casseroles consisting of Doritos ever again!

I decided to add an extra picture so you can see what the inside looks like too. Not the best photo but hey, you get the idea. :)

Tex Mex Casserole
Heavily Adapted From-All Recipes

1 lb lean ground beef
1 packet Taco Seasoning
1/4 cup water
1/4 cup Sour Cream
1 can spicy chili beans
1 can Rotel
1 can corn, drained
1 package Nacho Cheese Doritos
2 cups shredded cheddar cheese, divided ( I used cheddar jack)

Preheat oven to 350 degrees

Brown meat in a large skillet. Drain and add taco seasoning, water, corn, beans, sour cream and Rotel. Stir until well combined. Crush about 3/4 of the Doritos and place them in the bottom of a 9x13 baking dish. Pour the meat mixture on top of chips. Add one cup of cheese and and the rest of the crushed chips. Top with additional one cup cheese. Bake for 15-20 minutes or until casserole is bubbly. Garnish with green onions if desired. Sour Cream is great on this too! Enjoy!
