Pancake Muffins

So, I have seen many of these recipes floating around the Internet and have been meaning to make them but haven't gotten around to it until today. I don't cook breakfast all that often but I'm always up for trying new recipes. My family loves pancakes and these are so simple to make I figured I had to give them a try. They were delicious!

Pancake Muffins

2 cups pancake mix
1 1/2 cup water (room temperature)
1/4 cup maple syrup
Add ins of your choice (we used blueberries, bacon, and chocolate chips)


Preheat your oven to 350.

Grease a standard-size muffin pan. Mix your pancake mix and water together in a bowl until large lumps disappear. Swirl maple syrup into pancake batter and mix slightly. Fill each muffin tin 3/4 full with batter. Sprinkle your add ins in the center of each muffin and push down slightly. Allow mix to rest for 4-5 minutes and then top your muffins with additonal batter so that your add-ins are covered.

Bake for 30-40 minutes or until tops are golden and spring back when touched lightly. Allow to cool and enjoy!
