Buffalo Chicken Lasagna

If you read my blog you know that I am obsessed with all things Buffalo Chicken. I actually never get sick of it! I'm always on a quest for new Buffalo Chicken recipes and this is going to be one of my new favorites! I did some experimenting with the ingredients to fit my family's taste, but if it were up to me there would be blue cheese crumbles in it but my hubby doesn't like it. With Blue Cheese or without this lasagna was incredible.  All of my favorites (buffalo chicken, cheese, and noodles) layered together to make a beyond delicious lasagna! If you are a big fan of Buffalo Chicken (like me) you have got to make this! Trust me, you won't be disappointed!

Buffalo Chicken Lasagna

2 cups cooked chopped chicken ( I used Rotisserie)
12 no bake lasagna noodles
1 15 oz container ricotta cheese
1 egg
2 tbsp blue cheese dressing (I had to find a way to sneak something blue cheese in this lasagna)
1 tsp garlic powder
1 tsp onion powder
1 can petite diced tomatoes, drained
1 cup Buffalo Sauce
2 1/2 cups shredded cheese ( I used sharp cheddar)

In a mixing bowl combine chicken and wing sauce. Set aside. In another bowl combine ricotta cheese, egg, dressing, garlic and onion powder. Stir well until combined. In a 9x13 baking dish spread a small amount of wing sauce in bottom of dish. Add noodles, some of the ricotta mixture, diced tomatoes and chicken. Top with some of the shredded cheese. Repeat 2 more times.
Cover dish with foil and bake at 400 degrees for 30 minutes, remove foil and cook for an additional 10 minutes uncovered or until noodles are soft and cheese is browned and bubbly. Enjoy!

  7. So i decided to try this last night and everyone loved it !!! I had to leave it in the oven for an extra 15 minutes to soften the noodles. I think next time what i would do differently is add less ricotta because i found it very watery and messy and add some greens such as broccoli or spinach...overall great recipe and very easy to make ..


    1. Glad you all loved it! I use Barilla no bake noodles and find that they cook faster than other no bake noodles. If you decide to try it with a green veggie let me know how it turns out!

  8. So glad I found you on Melt in Your Mouth blog hop...when I saw "Buffalo Chicken" I HAD to check it out. Not only do I love Buffalo style chicken wings, we have a pizzeria in my town that serves a Buffalo Chicken pizza that is amazing! It's my favorite flavor.
