Twice Baked Potato Bake

We enjoyed these tasty potatoes alongside our Spicy BBQ Chicken. My mom used to make something similar growing up that she would serve when she had company and at holidays. It was always so good. My version is slightly different but just as delicious!

8 medium (5 oz.) baked potatoes
12 oz package of bacon, cooked and crumbled
1/3 cup milk
2 tbsp butter, cubed
1/2 tsp pepper
1/2 teaspoon salt
2 cups shredded cheddar cheese, divided
2 oz cream cheese, softened
1/4 cup sour cream
2 tablespoons chives (optional)

Remove baked potatoes from oven. Scoop potatoes out of the shell and put into a large bowl. Mash with a potato masher. Mix in the milk, butter, cream cheese, sour cream, salt and pepper.
Transfer potatoes to a greased 2 quart baking dish and sprinkle with (1 cup) of the cheese and then bacon. Sprinkle with remaining 1 cup cheese.

Bake, uncovered at 350 for 20-25 minutes or until cheese is melted. Top with Chives if deisred. Enjoy!
