Slow Cooker Chicken Enchilada Soup

I know it's only the middle of August and I'm already making soup but today was the perfect day for it. Rainy and unusually chilly for this time of year. This hearty soup was delicious and the leftovers are even better!

Slow Cooker Chicken Enchilada Soup

2-3 Boneless Skinless Chicken Breasts
1 large onion, diced
4 cloves garlic, minced
4 cups chicken stock
1 19oz can Enchilada Sauce
1 8oz can tomato sauce
2 tsp Chili Powder
1 tsp Cumin
1/8 tsp Cayenne Pepper
1 cup shredded cheddar jack cheese
1 cup shredded american cheese blend
1 can whole kernel corn, drained
Sour Cream, Shredded Cheese, Corn Chips, Green Onion, Chopped Tomato, or Cilantro (For Garnish)

Add all the ingredients to the crock pot except the corn and cheese. Stir and cover. Cook for 4-6 hours on low. During the last hour of cooking time remove chicken breasts and shred. Return to crockpot and add the cheese and corn. Ladle into soup bowls and garnish with toppings of your choice. We used sour cream, green onion, cheese, and corn chips. Enjoy!

  4. I totally agree. I am so ready for cooler weather and hot soups. I love Fall. I think I can say it is my favorite time of the year. A few years ago I got my dream crockpot and love making everything I can in it. Yum! This recipe looks delicious!

  7. Hey my kitchen is cool--therefore we eat soup year round. Because I love soup. This looks like a great recipe, a plus that it's a crock pot recipe.
