Hearty Breakfast Skillet

I love breakfast skillets. I don't make them at home very often so this was a nice treat for us. A change from our usual weekend breakfast of muffins or bagels.

Hearty Breakfast Skillet

1 bag frozen hashbrown potatoes ( I used diced)
1 onion chopped
10 slices bacon cooked and crumbled
2 cups cheddar cheese
6 eggs
2 tablespoons oil
Additional veggies of your choice

Heat oil in large saucepan add potatoes and onions and cook for 15 minutes per side or until tender. Add bacon and cheddar cheese. Top with eggs of your choice. Serves 4.
